Yes. Plainpad is open source under GPL-3.0, so you always have the full source code.
The GPL-3.0 license already lets you self-host, modify, and even resell the software. The white-label offering is a paid, supported package on top of that: hands-on help removing and replacing Plainpad branding with your own, and a written license document confirming the agreed branding and commercial terms for your deployment. It does not take away any freedom the GPL-3.0 already grants you.
